Lazy Day with Spanish Chicken

Today was spent watching TV and looking at wedding venues. I have expanded my search to different states and locations. We talked about getting married on top of a lighthouse, in a vineyard in Napa Valley, out West. Eloping is suppose to be easy, right?

Dinner was inspired by Skinny Taste. If you visit my site often, you know how much I love Gina’s website. She has such great ideas!

You can find the recipe for Chicken a la Criolla here. Her recipe is for the slow cooker, but I cooked mine in a pot. I seared the chicken (I used bone in) and veggies, then added the other ingredients. It turned out really good.

I served my chicken with Spanish Rice. I cooked one cup of white rice with 1/3 cup bell pepper, 1/3 cup onion, and on package Sazon (Look for MSG Free). I cooked the rice with 2 cups of water for 20 minutes.

Now, time to watch more TV. We have a long ride to South Miami tomorrow.
