Guess What I Did!

Guess what I did!! No, I didn’t wake up with a hangover! I cooked dinner! Something different too. And took a semi-good picture to go with it!!

The other night, I made, Pork Tenderloin with Apple and Onion Chutney, and it was good!

Pork Tenderloin with Apple and Onion Chutney

Makes 4 Servings

  • 1 1/2 lb Pork Tenderloin
  • 1 tsp Ground Mustard Seeds
  • 1 tsp Ground Coriander
  • Salt and Pepper to taste
  • 2 Large Apples- Chopped
  • 1/2 Large Onion- Chopped
  • 2 Tbsp Brown Sugar
  • 1/4 Cup Golden Raisins
  • 1/4 Cup Chopped Pecans
  • 1/4 Cup Apple Cider Vinegar
  • 1/2 tsp Ground Mustard Seeds
  • Salt and Pepper to taste
  • Crusted Red Pepper to taste
    • Combine mustard seed, coriander, and salt and pepper and rub onto pork.
    • Preheat grill pan over medium heat
    • Combined all the other ingredients into a pot and cook over medium low heat for 20-25 minutes.
    • Place pork tenderloin in pan. Cook for 15-20 minutes, or until internal temp is 145 degrees. Rotate pork during cooking time to sear all sides.
    • In the last few minutes of cooking, brush meat with some of the juice from the apple and onion chutney.
    • Remove from pan, and allow meat to rest for 10 minutes before slicing.
      • Serve with apple and onion chutney.  
      • I served the pork with Collard Greens on the side.

Tomorrow is Operation Clean House. Really today was, but that didn’t happen! I did find a photographer today! I’m so happy! One more thing check off the list!!
