A normal Thanksgiving for me… Eat way to much savory food… Have to pick between one type of pie… only eat one bite… Feel bad for wasting pie… Try to eat more pie… think about getting more stuffing… eat more stuffing… Hate life.
I feel I always miss out on dessert, so I thought I would start my Thanksgiving post with dessert, to insure I have room.
My bites size desserts have everything you love about Thanksgiving pies in just one bite.
First, on the list, is a pie you’ve seen on the blog before. This time I have prettier pictures.
Mini Pecan Pie
Makes 15 mini pies
- 15 Mini Phyllo Dough Shells
- 1/2 Cup Pecans-Chopped
- 1 Egg
- 1/3 Cup Corn Syrup
- 1/4 Cup Sugar
- 1/2 Tsp Vanilla Extract
- 1 Tbsp Butter-Melted

- Preheat oven to 350.
- Toast Pecans in oven for 5-7 minutes. As Rachael Ray says, your nose will know when they are toasted.
- Remove from oven and coarsely chop. I used my Slap Chop.
- Place phyllo shells on foiled lined pan.
- Combined the nuts, egg, syrup, sugar, vanilla, and butter.
- Spoon mixture into shells.
- Bake for 12-14 minutes.
- Allow to cool before serving.
I have a problem every year. Do I eat my Mommy’s yummy Pecan Pie, or do I go with the Apple Pie? I battle back and forth but usually go with the Pecan Pie. My mini apple bites are just enough to get my apple fix, and I don’t feel I have to finish a whole slice.
Mini Apple Pie
Makes 15 mini pies
- 2 Granny Smith Apples- Peeled and Small Diced
- 1-2 tsp Lemon
- 3 Tbsp Brown Sugar
- 1 Tbsp Honey
- 1/4 tsp Nutmeg
- 1 tsp Cinnamon
- 15 Mini Phyllo Dough Shells
- Preheat oven to 350 degrees
- Heat a sauce pan over medium low heat.
- Add apples, lemon, sugar, honey, nutmeg, and cinnamon to pan.
- Cook 5 minutes or until apples start to become tender. I wanted the apples to have the same texture as apple pie but did not want the phyllo shells to burn.
- Fill pies with apples and juice.
- Bake in oven for 12-14 minutes or until crust is golden brown and apples are tender.
- ENJOY!

London and I decided sleep sounded like more fun! He is a good cuddler. Until he decides to sleep on my head! We were both tired after our run.
The whole family went for another run, tonight. I needed a run after eating all those mini pies.
The difference in my pecan pie is I don’t toast my pecans, and wait till I have everything but pecans in my crust before adding the pecans. That was I can have just the right amount in each pie. Hoping you both have a Blessed Thanksgiving. Miss You both already.Love You

I like my pecans evenly distributed through my pies! And I like my pecans chopped up, too. I’m not complaining about yours though. I’m really sad I’m going to miss it again this year 😦

I always make sweet potato casserole, which is pretty sweet! So I get to eat sweets for my meal AND dessert, yay 🙂
