All By Myself!

Today, I drove to Miami all by myself. I set my ladder up, inspected, and measured a roof all by myself! I was pretty proud! The only thing Huck helps me with is the roof. A month ago he bought me a small, foldable, ladder that was light enough for me to use. I made him ride around with me all day yesterday, so I figured I would go alone today. 

As I was measuring the roof, I couldn’t get Celine Dion’s song, “All By Myself” out of my head! Smile

FOOD

We are going to Georgia on Thursday, so we are trying to clear out all the food in our refrigerator. Yesterday, I found some cheese, leftover cooked ground turkey, fresh spinach, and prosciutto. Huck wanted lasagna, but I thought I could do better than that!

Rolled Up Lasagna

Make 4 Servings-2 Rolls Each

  • 9 Lasagna Noodles
  • 1/2 lb Lean Ground Turkey
  • 1/4 Red Onion- Diced
  • 2 Cloves Garlic- Chopped
  • 4 Handfuls Fresh Spinach- Chopped
  • 3 Slices Prosciutto- Thin sliced-Each slice cut into thirds
  • 1 Cup Mozzarella Cheese- Divided in half
  • 1/2 Jar Tomato Sauce
  • 1/2 Cup Panko
  • 1 Tbsp Butter
  • Salt and Pepper to taste
  • Directions:

    Preheat oven to 400 degrees. Boil pasta according to package directions. Drain.

    Preheat pan over medium heat. Add turkey, onions, garlic, and spinach. Season with salt and pepper. Cook turkey until brown. Remove from heat.

    Cover the bottom of a baking dish with sauce.

    Lay lasagna noodle on board. Place Prosciutto on one end. Spread about two tablespoons of meat mixture across noodle and top with cheese. Start at the end with prosciutto and roll. Some of the meat will fall out. Place pasta in baking dish, seam side down.

    Once all the pasta is in the pan, pour remaining pasta sauce over noodles and sprinkle with cheese.

    Combine panko and melted butter together and sprinkle over pasta and cheese. Bake for 20 minutes or until top is golden brown and cheese is melted.

    Serve and Enjoy!

    Not bad for leftover, huh!? I accidently bought Mozzarella “Pearls” instead of a ball. I just crumbled them up and sprinkled over the pasta. Fresh mozzarella taste less like feet is SO much better! Oh, and the panko was great too. It added an extra crunch!

    1. Rock on chica!! Way proud of you!! That’s a sweet accomplishment! Dinner looks delish as usual!! Sad we won’t see you before you heard north. Have a great trip…..bring me back some cold!! Say hi to the fam and all for us!
