Friday Night

When we got back to the car, it was a whooping 4 degrees!

Once we were in the car, we made our way to our cabin.

Nate took our fish to his parents house to clean them and said he was going to drop them off at our cabin on his way home. Again, he was great!!

While we were waiting for the fish, I made a snack plate for us to enjoy. We had crackers, apples, cheese, and mango ginger chutney. We also had Hummus. I LOVE HUMMUS!!

While I made the snack plate, Lisa built the fire. It was the perfect weather to curl up by a fire and snack.

Nate arrived about an hour after we left the park with our fish. He was fast. (Note the Stout! Again, my favorite beer over the weekend)

Lisa roasted some root veggies, and I sautéed the fish with some Salt, Pepper, Crusted Red Pepper, and Lemon.

The fish didn’t really sauté. More like boiled but everything was really good. And we only used 1/4 of a bag of fish.

After dinner, we played some games and enjoyed the fire.

We were in bed early Friday night with the plan to get up early again Saturday.

Saturday Morning

I did not realize Friday night, our cabin was overlooking Lake Superior. We woke up in time to see the sun rise over the lake.

Breakfast was great. Baileys for my coffee… Yes Please! (we were on Vacation after all!!)

We enjoyed our coffee with Grapefruit, Banana, Apples, Cheese, and Bagels with Pineapple Habanero Jelly and Goat Milk Cream Cheese. The Pineapple Habanero Jelly was amazing. Lisa bought it at the Hot Sauce store at the Mall of America.

We finished breakfast around 8AM and headed out to go hiking to a waterfall.

I figure I will stop here for now. I’ll do a post tomorrow for our trip to Gooseberry Falls. We got to hug a waterfall and walk on a moving river! Make sure you come back tomorrow to see it.

FAT TUESDAY

Since today is Fat Tuesday, I thought I would share a recipe to celebrate Mardi Gras. I feel this weeks post may be Blogging overload! I have lots to catch up on. I found this recipe on The Pioneer Woman’s blog. I did not have any heavy cream, so I used a mix of low fat sour cream and cream cheese. My version is lighter than hers. She used a whole cup of heavy cream, but it doesn’t miss out on flavor! We like stuff spicy. Feel free to adjust this to your liking.
