Games, Food, and Beer

Yesterday, we went to a pig roast. What’s better than great food, yard games, good friends and beer?

We arrived around noon and helped with the last bite of food prep. Sue and I planned to make sides to go with the pork. We decided on Caribbean style with plantains, quinao and black beans (A play on rice and beans), salad, fruit salad, and mango salsa.

Nate started the pig early Saturday morning. They ordered it through Publix. The price was very reasonable for the amount of people it feed and the amount that was leftover.

They stuffed the cavity with onions and garlic and rubbed him down with a spicy BBQ rub.

While the pig cook, we played Jenga. Huck made us a yard size Jenga set. This game is awesome. He is going to do a guest post later this week with information on how to make the pit and jenga set.

After a while, we had to use coolers to reach the top. The guys keep pulling out their cameras thinking “This time it’s going down!”

I was thinking the same thing 🙂 It finally got the better of us, and I was the Yard Jenga Champion.

We also played horse shoes before the pig was finished.

Of course, I had to jump in and help. I started out just keeping the face covered. It made Nate sad.

I had to get my hands in and help, though. I ‘d just washed my hands after all.

Once the meat was plated, it was time to eat.

Pig Roast Feast

The food was amazing! The Colombian Empanadas were among my favorite, but the pork stole the show. I also had a really great Peanut Butter and Chocolate Pie and a Chocolate Chip Cookie for dessert including lots of fruit.

After food, the guys pulled out their homebrews and passed them around.

After all the home brews, I went back to my Shiner Bock. I’m a light weight and can’t drink heavy craft beer all night.

The rest of the night was spent around the fire, talking.

This morning, I used some of the leftover pork for Potato Hash. It was so good. The spicy rub gave the hash a great flavor.

I did not get a picture of the mango salsa, but a few people asked for the recipe.
