Shrimp and Beer Cheese Grits

Shrimp and Grits is a weird combination! I know. Anyone not from the South {Charleston/Savannah South} probably feels this way. I’m from the “South” and still found it a weird combo. But sometimes weird combos make the best meals. I personally do not like grits unless there is a ton of cheese added to them. Then they’re AMAZING!! Add a little goat cheese and beer to the mix and they’re mind blowing!

I’ve made Shrimp and Grits a couple times in the past, and Huck usually will pass on the grits. This time, I didn’t give him another option. I could tell he was skeptical as he was looking at his plate. I looked back at him a few minutes later, as he was walking back into the kitchen for more. I think he liked it!

For this recipe, I used New Belgium Tour de Fall. This beer has a nice hop flavor at first then finished a little sweet. The sweetness paired well with the spicy flavor from the shrimp.

We bought kayaks last week. This makes us real Floridian’s now. We took them out yesterday to watch the sunset from the inlet. It was beautiful!

It took London a little while to relax, but he found a comfortable spot on the boat and loved it. This was after he jumped out of Huck’s boat, and tried to swim to shore. He may be small, but he can swim FAST!

Thursday, we helped our buddy hand out beer at a baby shower trade show. Weird combo, but I think the dads-to-be and none pregnant people appreciated  it.

Serves: 2 Servings
Quick and easy Spicy Shrimp with Beer, Cheddar, and Goat Cheese Grits. Perfect for brunch, lunch, or dinner.
Ingredients
  • SHRIMP:
  • 1/4 Cup Bacon- Cooked and Crumbled
  • 1/2 Medium Onion- Diced
  • 2 Cloves Garlic- Chopped
  • 1 Bell Pepper- Diced
  • 2 Jalapeno- Chopped (This depends on your spice level. We like it hot)
  • 1 Can Diced Tomatoes
  • 1 Can Ro-Tel
  • 1/4 Cup Beer
  • 2 Tablespoon Tabasco Sauce
  • 1 Tablespoon Cajun Season
  • 1/2 lb Shrimp- Deveined and peeled
  • BEER CHEESE GRITS:
  • 1 teaspoon Oil
  • 1 Clove Garlic- Chopped
  • 1/4 Cup Quick Cooking Grits
  • 1/4 Cups Beer
  • 3/4 Cup Chicken Stock (Low Sodium is best)
  • 1/3 Cup Cheddar Cheese
  • 2 Tablespoon Goat Cheese
Instructions
  1. SHRIMP:
  2. Slice Bacon and cook in a large skillet until crispy. Remove from pan.
  3. Add Onions, Garlic, Bell Pepper, and Jalapeno to pan and cook for 6-8 minutes until onions and peppers are tender.
  4. Add Tomatoes, Beer, Tabasco, and Cajun seasoning and simmer over medium low heat for 15 minutes.
  5. Add shrimp and cook an additional 6-10 minutes or until shrimp is fully cooked. (Time will very depending on the size of shrimp.)
  6. BEER CHEESE GRITS:
  7. Heat another pan over medium heat and add Oil and Garlic. Cook for 1-2 minutes.
  8. Add Beer and Chicken Stock and bring to a boil. Once boiling, stir in grits slowly to prevent lumps.
  9. Whisk in Cheeses.
  10. Bring to a boil and reduce heat to low. Cover with lid and allow to cook for 5-7 minutes or until desired thickness.
  11. Check seasonings and add additional salt and pepper as needed.
  12. Serve Shrimp mixture over Beer Cheese Grits
