Leave it to my to wait until the last two days of the month to share a recipe dedicated to autism awareness. Either way, here it is, and it’s good!

For the third year in a row, we volunteered at the Els for Autism Craft Beer and Food Pairing at Old Palm Golf Club with TBC and Twisted Trunk {links for 2013 and 2014‘s event}. This is one of my favorite events because it includes some of the best restaurants in the area, of course the best beer, and supports a great cause.

Every year, TBC brews a blueberry beer in honor of Autism Awareness month and to support the Els for Autism Foundation. This year’s blueberry saison was brewed with over 70 pounds of fresh organic blueberries.

This year’s event included some great pairings. I was pouring a Lambic style brown ale {a sour/tart brown} with the guys from Hampton Forks. It was paired with their Florida Waygu Beef Crudo. It was so flavorful and paired well with the beer.

One of my other favorite dish from the night was a wild mushroom slider from Eurochefs Catering. SO GOOD!!

The blueberry saison was paired with a scallop risotto made with blueberries from Deep Blu. It sounds like a weird combination at first but tasted great together. My blueberry pairing wasn’t as adventurous but still good nonetheless.

This is my basic go-to muffin recipe. I added the Blueberry Saison and fresh blueberries to the mix, but honestly, you can add anything to this batter. If you want a stronger beer flavor, add all beer and less milk {Your beer and milk ratio can be adjusted. Just make sure you have one cup of liquid total}. Personally, blueberry muffins are my favorite. Growing up, we had blueberry muffins all the time. That and Cap’n Crunch were my go to breakfast items as a kid. Those were the days!

You have two days left to get TBC or Twisted Trunk’s Blueberry Saison, so hurry! If that’s not an option, any blueberry beer will work just fine. {Side note: Blueberry beers hold a special place in my heart. Sweetwater Blue was the first craft beer I actually enjoyed. It was the gateway beer that lead me down the road to craft beer obsession.}

Serves: 12 Muffins
Ingredients
  • 2 Cups All Purpose Flour
  • 1 Tablespoon Baking Powder
  • 1/4 teaspoon Salt
  • 1/2 Cup Sugar
  • 3/4 Cup Blueberry Beer
  • 1/4 Cup Milk
  • 1 teaspoon Vanilla Extract
  • 1 Large Egg
  • 4 Tablespoons Butter- Softened
  • 3/4 Cup Fresh Blueberries*
Instructions
  1. Preheat oven to 350 degrees.
  2. Sift together Flour, Baking Powder, and Salt into a large bowl.
  3. In another bowl, combine the Sugar, Beer, Milk, Vanilla, Egg, and Melted Butter.
  4. Slowly incorporate the flour into the liquid mixture until fully combined but making sure not to over mix the batter {It will cause the muffins to become tough and dry}. Lastly, add the blueberries and lightly stir to combined.
  5. Line a muffin tin with cupcake liners, and spoon the batter 3/4 of the way full.
  6. Bake for 25 minutes or until golden brown and a toothpick comes out clean when inserted into the center.
  7. Serve with butter or a drizzle of honey.
Notes
*You can use frozen blueberries for this recipe. Just make sure they are fully thawed before adding them to the batter.
