Matching Burns

This afternoon, I was browning some pieces of beef bones (The package said beef stew bones. All I seen was beef stew) for a beef stew I am making in the crockpot for dinner. I picked up a piece with my tongs and dropped it in the hot oil. Some of the VERY HOT oil splashed on my arm. I have 3 small red blisters on my forearm now. As I was complaining to Huck about how bad it hurt, I hear him start cussing. He was taking his pizza out of the oven and touched his arm to the door.

And I had my hands full and watched the hot oil burn my skin. I win for most painful. JK!

Luckily, the rest of dinner involves the crockpot. Hopefully we can make it the rest of the day without anymore scars.

A few night ago, I made some Peach Crisp for dessert. I found a can of peach in the pantry and originally wanted peach cobbler but was to lazy to make a crust. Mixing together flour and oats seemed a lot quicker. It was really good, but I wish I made the cobbler instead. My mom makes the best beach cobbler!! I’m not good at Southern Food. I can’t make sweet tea, I can’t fry anything (I can make some really good oven “fried” food though), I like my veggies to taste like vegetables and not pork, plain grits are gross, and I like sweet cornbread made with butter.

My Mom hates the last one. She makes cornbread with oil, but I think the oil gives you that greasy feeling on the roof of your mouth. An Ex’s Mom showed me how to make cornbread when I was in high school, and she used butter. Anytime I make traditional cornbread, I make it like hers. (She reads my blog, too. I wonder if she remembers showing me??) That was back in the days when I started getting into cooking. I feel bad for the people that had to eat my food then. Smile Bland and Burnt are two words that come to mind! I still have food that comes out bland or burnt… Just not as often, and I usually have a few amazing dishes in between.

I bet today is going into the bad day book. But I think to make good food you have to make bad food too!

Now back to the Peach Crisp!!

Peach Crisp

Makes 2 Individual Servings

  • 1 Can Peach- Save Juice (You can use frozen or fresh too)
  • 1 Tbsp Flour
  • 1 tsp Lemon Vest
  • 1/2 Lemon Juiced
  • 2 Tbsp Brown Sugar- Divided
  • 1/4 Cup Flour
  • 1/4 Cup Old Fashion Oats
  • 2 Tbsp Butter
    • Preheat oven to 350
    • Add juice from peach, lemon vest, lemon juice, and 1 Tbsp brown sugar to pan and heat over medium low heat.
    • Continue cooking until reduced by half.
    • Mix together flour and peaches and add to individual ramekins.
    • Pour reduced syrup over peaches.
    • Mix together the rest of the brown sugar, flour, and oats.
    • Add 1 1/2 butter and fully combined.
    • Sprinkle oat mixture on peaches.
    • Top each ramekin with pieces of remaining butter on top to help topping brown and place in oven.
    • Bake for 20-25 minutes or until filing is bubbling and topping is golden brown.

  2. OMG i wanted some of moms peach cobbler the other day 🙂 but still haven’t got any i wish i could make that and her biscuits and gravy and i know Michael will really love me lol i miss you need more info on what I’m wearing and doing? love you big sis!!!

    1. Your lucky you can get her cooking when ever you like. I made biscuits for the first time ever last night. I will post them later today. Not like her homemade biscuits but really good!

  3. Hey that cornbread sounds really good! I remember eating some things way back when that I didn’t know what they were. But most of the time you’d get it right. 🙂
    I don’t think we turned down many meals. Luv and miss you Sloane.
