Last night was date night. I gave Huck a Date Jar (cheesy yes, but he loved it) for V-Day and tonight’s stick was dinner and Wii. I can probably count the number of times I’ve played our Wii on one hand. I always have fun playing and think “I should play this more” but never do. We went through almost all the games, but my favorite on Wii Sports Resort was the Swordfight.
I did kick Huck’s butt at Frisbee Golf…
+35!!! No sure why Huck had the high score, though 😉
Can’t wait to see what our next date night will be! I picked some good ones for the jar.
BEST EGGS EVER!
I am addicted to baked eggs. I tried them a few weeks ago and fell in LOVE! They take on a different flavor. They have a richer/creamier taste. Oh, and they are SUPER easy and about a 100 calories a serving! DOUBLE SCORE!!!
This is just a basic recipe. You can add or subtract anything you do or do not like. You can use larger ramekins and add more veggies. You can omit the ham. The sky is the limit on this one (the calories will change depending on your ingredients). I love recipes like that. I can make this tomorrow with mushrooms and feta and it will have a completely different taste. Yum, peppers, onions, and avocado would work, too. I just need larger ramekins to hold more stuff.
The ham may have burned a little, but they were still good. It just gave it a little crunch.
My goal for tonight is to work on the Food Page. I can’t tell you the last night I touched it. I have so many great recipes I need to update. That way, I’m not looking through all my post and neither are you! See you tomorrow with another yummy recipe.

I couldn’t tell ya the last time we were on the Wii. Sounds like a date me and your dad need to take. The eggs looked Delicious, at work they mix frozen veggies and bake with scrabbled eggs, not to bad but it gets old having the same thing every time and it’s served at lunch time.
