Beer Bread BLT

Beer Bread BLT (2)1

OMG!! I have a recipe to share! With halfway decent pictures! I know; I couldn’t believe it either. I’ve been in kind of a beer recipe funk lately. I honestly couldn’t think of anything to make. Everything I thought about, I’d already made. I was tempted to go through old post and re-photograph some of my recipes. I’m that desperate for content, and some of those recipes are amazing but will never get the time they deserve because of crappy pictures!

All that changed yesterday afternoon at work. I was staring at my computer and BAM! A recipe came to mind, then another one. I thought of 5 ways to include beer recipes into our little ‘challenge’ we have going on right now.

We’re really bad about going to Publix and buying stuff for dinner when we already have a freeze/refrigerator/pantry full of stuff. When I opened the freeze last week and a pack of chicken thighs landed on my toes, I decided to start Operation Clean Out The Freezer. I made a list of all the meat we currently had and took inventory of everything in the pantry and fridge that needed to be used. Some of the items in the freezer are starting to get freezer burn and need to be used ASAP! All the more reason to not buy more, right?

From my inventory list {Yes, I’m really that dorky. I created an inventory list! An actually list!}, I came up with a list of 16 meals we could make using the meat in the freezer, items in the fridge, and stuff in the pantry. Actually, I came up with 14, but I’ve added two meals for lunch {Tuna Casserole and these BLT sandwiches}. We’re not buying anything new until everything we currently have is gone, so no random trip to Publix to buy stuff for tacos. I actually feel like this little challenge has made me more creative in the kitchen the past two weeks. That could explain me coming up with beer recipes.

Now, back to this delicious BLTs. Our friend gave us a bag of fresh tomatoes from their neighbor’s garden on Sunday. Holly said something about BLT sandwiches, and I couldn’t get the thought out of my head. We had a pack of bacon that needed to be used up, too. The only problem, I didn’t have any loaf bread. I did have a whole bag of self-rising flour in my pantry, though! And an endless supply of craft beer.

At first, I was worried the Beer Bread would fall apart, and a few pieces did, but after toasting each piece in a pan, everything held together fine. And nothing beats warm, fresh, bread right out of the oven!

I skipped the iceberg lettuce on this one. I think it’s so boring, so I decided to try some baby spinach to switch things up. Plus I’m sure I helped increase my Calcium, Vitamin K, etc. for the day.

I used Shiner Bohemian Black Lager for the bread. It had the perfect amount of flavor without being overpowering.

It took every ounce of willpower I have not of make another one {I needed some of photos!} l couldn’t wait to finish snapping these pictures, so I could devour this sandwich, by the way. I felt like Ginny with a strip of bacon in his face, “can I eat it now? NOW? GIVE ME BACON AND BEER BREAD!!” People that know Ginny know exactly what I mean by that.

Now, hopefully I’m back in the beer recipe making saddle again. The fact that it’s darker a little later helps with pictures, too. I’m not promising anything, though!
